Pumpkin Cookies

Red Pepper Pesto Spread

Cookie part:
1 cup butter
1 cup sugar
1 egg
1 cup pumpkin
1 tsp. vanilla
1/2 tsp. salt
2 cups flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon

Icing part:
1/2 cup brown sugar
3 TBSP butter
4 TBSP milk

Mix ingredients in order.
Spoon dough onto ungreased cookie sheet.
Bake at 350 degrees for 10 minutes.
Cool completely before icing.

Icing:
Boil for two minutes, add 1 cup unsifted powdered sugar.
While warm, spoon desired amount onto cookies.

*For the flour, I used 1/4 cup soy flour and 1/4 whole wheat flour,
then 1 and 1/2 cups regular flour. They were very moist.
